My Japanese Corturnix quail have begun laying lots of eggs, which I both enjoy in my diet, and sell. Tonight I thought of a new way (for me) to enjoy them. Hard-boiled, drained, then cooled, they are delicious dipped into soy sauce with wasabi, then tossed in my mouth, shell and all. The shells are thin and very easily chewed and thus are a great source of dietary calcium. Plus those shells added a very nice texture to my decadent snack. Next, I will pickle some hard boiled ones in home-brewed kombucha tea with herbs as I love pickled eggs period. I have not made sushi/sashime for easily a year....this surge in quail eggs has inspired me to correct that. John
